As winter approaches I generally grit my teeth and just “get through”, but I read an article the other day that made me reevaluate my relationship with winter. The piece talked about how Norwegians actually enjoy and thrive during the crazy cold months they experience. The article states:
“It turns out that in northern Norway, ‘people view winter as something to be enjoyed, not something to be endured,’ says Leibowitz [the author], and that makes all the difference.”
In fact, the Norwegians have a word for all the sense of coziness the cold weather brings….koselig. I love that don’t you? There is just something about snuggling down in soft blanket with a mug of cocoa and watching the snow fall that is peaceful and beautiful.
The quiet winter nights help us focus on what is truly important….family and friends and sharing simple moments with them. Winter makes me think of the still, small voice of God, whispering to us on the chilly nights that He is our warmth, our provider, and protector. The crisp air can be invigorating and a deep snow let’s me see my ordinary world as a magical.
If I spend all winter wishing for spring, I miss all that.
I miss the joy of “koselig” season. So for all of you who are ready to dig deep and find the joy this winter, I have a delicous recipe to get us started… Light Peanut Butter Hot Chocolate.
Peanut butter and chocolate…a match made in heaven, am I right?! When it gets cold this is one of my go-to hot drinks for getting cozy! Use whatever milk and sugar type you are most comfortable with. I recently got some Truvia (affiliate link) and I’m enjoying trying it out in my favorite recipes. This recipe also calls for a great ingredient, PB2 (affiliate link), which is a powdered peanut butter with the oil removed so the fat content is altered. I love throwing this in things like my Peanut Butter Banana Smoothie or oatmeal for a little extra peanut butter flavor!
Peanut Butter Hot Chocolate
- 2 1/2 cups milk I used almond
- 1/2 cup water
- 2 T cocoa powder
- 1 T PB2 Powder
- 2 T Truvia Sweeten to taste with your preferred sweetener or sugar
- 1/4 teaspoon salt
- 1/4 teaspoon vanilla
- Combine all ingredients in pan and heat on stovetop over medium heat, whisking occasionally. Allow to heat to desired temperature and then whisk vigorously to froth. Serve with whipped topping and marshmallows if desired.
