Sweet Onion Shredded Chicken in a Slow Cooker

You guys.

It is hot out. So hot. Too hot to be cooking.

Enter slow cooker. Or crockpot. Whatever you want to call it, “it” will be cooking supper tonight. I love this simple sweet onion crockpot chicken because it is so easy, so good, and so easy. No standing over a hot stove, just add the ingredients, turn your crockpot on, and go on about your summer activities….I know those Pokemon’s won’t catch themselves. 😉

Sweet Onion Chicken in crockpot

Sweet Vidalia onion salad dressing is the base of this recipe.(I used Ken’s dressing’s version.)  A friend brought it over earlier this summer and I loved it and immediately began to dream of it married with chicken. YUM! It is good hot, but you can also refrigerate it and eat it on salads, plain, on a bun, a piece of toast or whatever!

Sweet Onion Shredded Chicken

Sweet Onion Crockpot Chicken

Yield: 6 1/2 cup servings
Prep Time: 15 minutes
Cook Time: 6 hours
Total Time: 6 hours 15 minutes

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 cup Sweet Onion salad dressing
  • 1 onion diced
  • 1 teaspoon garlic
  • 2 teaspoons paprika
  • 1/4 teaspoon freshly ground black pepper

Instructions

  1. Place all ingredients in crockpot.
  2. Cook on low for 6 hours.
  3. Shred chicken and serve on whole wheat buns.

Literally, how simple is that! I like to shred my chicken using my KitchenAid stand mixer (I have the pretty yellow one!). Just use the regular paddle attachment and the “stir” setting for a minute or two. It shreds the chicken perfectly! Also, I just hate the sound that forks make when you shred chicken. Gives me shivers.

I’m definitely putting this on my healthy meal prep list. So easy to do up on the weekend and have for lunches or dinners throughout the week. I still feel like we are sort of playing it fast and loose with meal prep around here this summer, so I’m kind of looking forward to when things get back in a “normal” rhythm around here in a few weeks. I mean, I LOVE SUMMER! Love it. But we are kind of at the point in the summer when I start to crave the order of fall and I also want to buy school supplies, but that’s beside the point. The point is make this yummy sweet onion shredded chicken in a crockpot to make your life easier and healthier.

  1. I did register for a slow cooker – so I am goinggggg to make this come Nov 13th, LOL!!! I hope I love the slow cooker as much as everyone… One thing I know for sure, I would ADORE that onion dressing!

    1. It’s super-delish! And I’m sure you will adore your slow cooker…it actually took me awhile to get into using it because you do have to prep ahead of time and that is not always my strong point. 😛
