Twice a month I have a MOPS (Mothers of PreschoolerS) meeting. I used to think that being in something like MOPS was a little silly, but after my daughter was born and we got through the bleary-eyed first months I realized I needed community.
I needed a mom-tribe. So I joined MOPS and it has been transformative to my mothering, emotional health and faith walk.
While I could wax poetic about all the things it has meant to me there is this one thing we do at MOPS that would keep me coming back even without the wisdom, support, and fellowship: we eat a potluck breakfast together without our kids.
I eat a meal and I fix ONE plate. No one interrupts me, no one needs “just one more thing”, it’s just me and a plate of yumminess, hot coffee, and my friends. Bliss.
So the point of all this is to say that my signature dish at MOPS has somehow become baked oatmeal.
I make it almost every time I bring in food because it is quick and easy, I don’t like egg dishes, and it’s nice to know that at least one thing on my plate is a healthy choice.
I like to mix up my baked oatmeal to suit the season and heading into the holidays this Apple Cranberry Baked Oatmeal seemed like I nice fit.
Like all my baked oatmeal recipes the core of this breakfast is delicious oats (full of fiber and whole grains!), then it is filled in with fruit (fresh apple chunks and dried cranberries), a hint of natural brown sugar, and a bit of butter.
It’s warm and filling and perfect. It’s even better when you eat it in peace with your friends, but it is pretty great to eat with your favorite little princess or superhero too.
Apple Cranberry Baked Oatmeal Recipe
Apple Cranberry Baked Oatmeal
This apple cranberry baked oatmeal is so simple to make--perfect for a quick, healthy breakfast around the holidays! It still feels special, yet is incredibly easy!
Ingredients
- 2 cups old fashioned oats
- ⅓ cup brown sugar
- ½ teaspoon baking powder
- ½ teaspoon salt
- ½ teaspoon cinnamon
- 2 eggs, slightly beaten
- ⅓ cup melted butter
- ⅓ cup applesauce
- ⅔ cup milk
- 1 1/4 cup apple slices
- 1/2 cup dried cranberries
Instructions
- Preheat oven to 350.
- Combine oats, brown sugar, baking powder, salt and cinnamon.. Beat eggs, butter, applesauce, and milk together using a whisk or fork. Stir wet ingredients into the dry until well combined. Fold in apple slices and cranberries until combined.
- Pour into greased 8x8 baking dish. Bake at 350 for 35 minutes. Remove from oven and let cool 5-10 minutes before serving.
