Banana Bread Oatmeal

Since having my little boy I’ve been BUSY, but I know it’s so important to eat well while breastfeeding so I always take time for a good breakfast. This banana bread oatmeal recipe has become my go-to! It’s quick, simple, warm and filling–plus the oats, flax and optional Brewer’s yeast are awesome for breastfeeding!

Banana bread is one of my favorite things so it is totally natural for me to create a bowl of oats that reminds me of one of my favorite foods. This oatmeal calls for just a teaspoon of pure maple syrup, but feel free to use whatever sweetener you prefer–honey would also be amazing!

I also love the added texture of walnuts-the crunch is perfect alongside the oats and bananas. Plus, walnuts pack a punch of brain-healthy foods like Omega-3s! Here is the total rundown on why this bowl of banana bread oatmeal is so amazing.

Banana Bread Oatmeal

Yield: 1 1/2 cup oatmeal

Ingredients

  • 1/2 cup old fashioned oatmeal
  • 1/2 cup water
  • 1/2 cup milk, I use almond milk
  • dash of salt
  • 1 Tablespoon ground flaxseed
  • 1/2 teaspoon cinnamon
  • 1 teaspoon pure maple syrup
  • 1 teaspoon Brewer's yeast, optional-great for breastfeeding mamas!
  • 1 Tablespoon walnuts
  • 1/2 banana sliced

Instructions

  1. Combine oats, water, milk, salt, flaxseed, cinnamon, maple syrup and Brewer's yeast (if using) in small saucepan. Stir over low heat for approximately 5 minutes until it thickens to desired consistency. Serve warm with walnuts and sliced banana.

Brewer’s Yeast – This is the kind I have and it has worked well and lasted a long time!

Flaxseed – If you don’t have access to flaxseed at your grocery store or you have little ones (and it is easier to order on Amazon than go to the store!) this is a great brand.
