Banana Peanut Butter Baked Oatmeal

Baked oatmeal is such a delicious breakfast! It’s just as healthy and nutrient packed as regular oatmeal, but there is something just a bit special about it baked.
I’ve had this idea for banana baked oatmeal rolling around in my head for awhile, but then a sudden gifting of bananas from our camp kitchen gave me the push to actually put it together and then at the last minute, I thought—what is better than bananas? Bananas with peanut butter of course!
Banana Peanut Butter Baked Oatmeal
Ingredients:
2 cups oats
1/4 cup brown sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 cups milk (of your choice)
1/3 cup butter
2 eggs
2 bananas smashed (If they’ve been frozen drain off some of that banana “juice” that comes with defrosting.)
2 Tablespoons peanut butter (or nut butter of your preference)
Directions
Combine oats, sugar, baking powder, salt and cinnamon. In separate bowl mix milk, eggs, bananas and butter. Add wet ingredients to dry and mix thoroughly until combined. Lightly grease 8×8 baking dish. Bake at 350 for 30 minutes. Warm peanut butter and drizzle over baked oatmeal.
Enjoy with a large glass of milk or cup of hot, french press coffee to take the chill out of your morning.

what are the stats on baked pb oatmeal. servings, size, calories etc
I normally cut my pan into 6 pieces. You’d have to plug the numbers into myfitnesspal or something similar to figure out the calories. 🙂
