Cafe Mocha Popsicles
Summer as a kid meant playing outside, running through the sprinkler, catching lightening bugs, and  sticky popsicles running down your fingers. I still love the ice cold treat of a popsicle on a muggy summer evening. It’s just a classic.
A few weeks ago I picked up a popsicle mold at Meijer on a whim. And it sat in my “plastic things” drawer for about a month. Then last night as I was cleaning up the kitchen I had a moment of genius.
Coffee+Chocolate+Popsicles.
Yes!! My beautifully caffeinated, deliciously chilly creation was born: cafe mocha popsicles.
It’s nice and icey and the mocha flavor is spot-on! Thankfully I had some cold coffee for iced coffee sitting in my fridge (you can never have too much coffee around) already. Â This recipe is so super quick and simple to make! It’s the perfect summer afternoon treat.

Cafe Mocha Popsicles
Cafe Mocha Popsicles are the perfect summer treat! Filled with chocolate, coffee, and almond milk they are icey, caffeinated perfection.
Ingredients
- 2 cups chilled {strongish} coffee
- 1 1/2 cup almond milk, 1/2 cup reserved
- 2 T cocoa powder
- 2 T sugar
- 1 t vanilla
- Dash of salt
Instructions
- Combine coffee and 1 cup almond milk.
- Combine 1/2 cup almond milk, sugar, and cocoa in a mug.
- Heat for 1 minute in the microwave.
- Whisk until well combined and sugar and cocoa is dissolved.
- Mix into coffee and milk mixture.
- Add vanilla and salt.
- Pour into popsicle molds and freeze overnight.
- Run molds under hot water to loosen.

Enjoy this little posicle while you put your feet up! Word to the wise, don’t let your kiddos eat one, unless you use decaf coffee or are okay with caffeinated babies tearing up the place. My child on caffeine makes me shudder. I swear, she gets one bruise healed up and then she gets another. She has the heart of an adventurer, but the coordination of….well, her mother.
With Nate still laid up from his ACL surgery so we are a pretty banged up clan over here, but at least we have caffeinated popsicles! I think that may be our summer slogan: banged up, but have popsicles.
