Caramel Apple Baked Oatmeal
Yesterday, we all learned hot to make caramel in a crockpot and now we get to use some of that scrumptious caramel to make this literally breathtaking Caramel Apple Baked Oatmeal.
Every bite is filled with apples, walnuts, caramel and chewy oats. Delicious. As good as I imagined when I dreamed it up and perfect for special breakfast or brunch on a cool fall morning.
Caramel Apple Baked Oatmeal
Ingredients:
2 cups oats
1/4 cup brown sugar
1/2 teaspoon baking powder
1/2 teaspoon salt
2/3 cups milk (I used almond)
1/3 cup butter
2 eggs
1 1/4 cup peeled and diced apples (3 apples for me)
1/2 cup roughly chopped walnuts
Directions:
Combine oats, sugar, baking powder and salt. In separate bowl mix milk eggs and butter. Add wet ingredients to dry. Fold in diced apples and chopped walnuts. Lightly grease 8×8 baking dish. Bake at 350 for 30 minutes. Warm caramel and drizzle over baked oatmeal.
A few notes: Sugar could potentially be reduced further depending on the sweetness of your apples. The brown sugar and butter combine to help create the caramel flavor in the oatmeal. You could use another sweetener, but sugar is sugar and brown sugar is better. At least in this particular recipe.

Lol! Try it for yourself! Even if you swap the butter for applesauce and the sugar out completely I bet it would still be pretty good! I’ll just eat my butter and sugar here in silence. 😉
