Cranberry Pecan Feta Salad

Today I’m popping in to share a quick and easy salad recipe that is my go-to for potlucks or dinners- Cranberry Pecan Feta Salad. It’s always nice to bring a salad to a gathering so then you are certain that there is going to be something green and healthy available. This salad is pretty basic, but so delicious! I also like it topped with some grilled chicken (I love this easy marinade for grilled chicken) for added protein as a standalone lunch or dinner.

Cranberry Pecan Feta Salad
Cranberry Walnut Feta Salad - a delicious and easy salad with just the right amount of flavor and texture. Perfect for a side or add protein to make it a complete meal.
Ingredients
- Two bunches romaine lettuce
- 4 ounces feta cheese
- 1/2 cup dried cranberries or cherries
- 1 cup pecans, roasted
- Raspberry Balsamic vinaigrette dressing
Instructions
- To toast walnuts: Preheat oven to 350. Spread pecans evenly over cookie sheet. Bake for 5-10 mins, watching closely to prevent burning. Remove from heat and allow to cool.
- Tear lettuce
- Add feta, cranberries, and cooled walnuts to salad. Top with dressing and toss.

This salad has just the right amount of sweet flavor from the cranberries, intensity from the feta cheese, and crunch from the pecans. I love the blending of flavors and textures in it!
Also roasting your pecans makes all the difference! They are more crunchy, the flavor is intensified, and the smell! Oh my word. Your whole house will smell like the mall at Christmas thanks to just a few minutes spread on a sheet and popped in the oven.
Because I am big on getting my money’s worth I almost always skip bagged lettuce kits. I’m just so cheap. But I realized that I can make my own “bagged salad kit” by prepping salad, putting it in a ziploc bag, and squeezing all the air out. Maybe this is something you smart people already do, but it JUST dawned on me and it’s a game changer. I sometimes add a folded paper towel to absorb moisture and like all bagged salads you have to use it quicker, but man, it is so convenient to have done the work ahead of time! Just save putting in your dressing serving.
(I’m sorry if I’m pointing this out and you’re like “duh, Kate-I’ve done that forever!”)
This Cranberry Pecan Feta Salad is delicious topped with grilled chicken, but I also adore pairing it with a hearty winter soup right now, this turkey chili or this potato soup would be divine with it!
