A few weeks ago I was browsing Pinterest and saw a mouth-watering picture of a chocolate banana bread. I pinned it, but after scanning the ingredients I knew it was not something that would complement my healthy eating goals, but I saw some potential. Working from this recipe I created my own “healthified” version that incorporated my favorite type of chocolate: dark chocolate.
Dark Chocolate Banana Bread
½ cup sugar
½ cup splenda or low calorie sweetener of choice
1/3 cup unsweetened applesauce
1 ¼ cup mashed (overripe) banana (about 3)
1 tsp vanilla
¾ cup white flour
¾ cup whole wheat flour
½ cup cocoa powder
1 tsp baking powder
½ tsp salt
2 ounces dark chocolate (1/2 a bar for me)
Directions: Combine sugar, eggs, and applesauce and blend on low speed. Add mashed bananas and vanilla; blend well. Mix flours, cocoa powder, baking powder, and salt in small bowl. Gradually add dry ingredients to wet, mixing on low speed. Chop dark chocolate by hand (well really by knife!) or in food chopper. Fold into batter, stirring just until well blended.Pour batter into greased bread pan. Bake at 350 degrees for 60-65 minutes. Cool and enjoy!
The flavor of this bread is mild banana and rich, dark chocolate. It is not overly sweet, but the perfect complement to a steamy mug of coffee.
