Easy and Healthy Blueberry Baked Oatmeal
This blueberry baked oatmeal is perfect for an easy and healthy breakfast that’s loaded with whole grains, fresh fruit, and healthy fiber. Each bite tastes like a delicious oatmeal cookie dotted with pops of blueberry!
You all know I’m basically obsessed with baked oatmeal! I have FIVE baked oatmeal recipes already on the blog, but since I am equally obsessed with blueberries I decided to combine these two into the most delicious blueberry oatmeal breakfast bake!

You can whip up this blueberry baked oatmeal, pop it in the oven and then grab yourself a cup of coffee in a fun mug and have a “mama moment”.
I love taking a half hour in the morning to just be….reading my Bible, praying, journaling, goal-setting, some light yoga, thinking about my day, drinking coffee…if I can carve out these minutes to realign myself with God and attune myself to His purposes for my day things just go so much better.

And things go really well when I have a hearty breakfast ready for my boys when the roll out of bed. These two silly boys wake up HUNGRY!! (As opposed to my sweet girl who prefers some wake up time before eating, like mama.)
I could barely keep them out of this blueberry baked oatmeal long enough to shoot these photographs. Griffin kept saying “cookie peas!” and trying to get a bite, so finally his persistence and overall cuteness was rewarded!

Blueberry Baked Oatmeal
This healthy blueberry baked oatmeal is an easy and delicious breakfast or brunch recipe! Healthy baked oatmeal is a great way to start the day!
Ingredients
- 2 cups rolled oats
- 3/4 tsp baking powder
- 1/2 tsp salt
- 1 tsp cinnamon
- 1/3 cup maple syrup
- 1/3 cup melted butter
- 2/3 cup milk
- 2 eggs, slightly beaten
- 1 cup fresh or frozen blueberries
Instructions
- Preheat oven to 350.
- Combine oats, cinnamon, salt and baking powder.
- Beat eggs, butter, maple syrup, and milk together using a whisk or fork.
- Stir wet ingredients into the dry until well combined.
- Fold in blueberries until combined.
- Pour batter into greased 8x8 baking dish. Bake at 350 for 30-35 minutes. Remove from oven and let cool 5-10 minutes before serving.

Yes! Once it has been cooked and cooled I like to refrigerate my healthy baked oatmeal leftovers in an airtight container in the fridge.

Can I double this recipe?
Can you bake this recipe with quick oats?
Yes! You can use either quick oats or old fashioned/rolled oats (same thing, different name–don’t ask me why!) in this recipe.
Using quick oats gives this a more tightly packed texture than the rolled oats version, but you can absolutely do it either way and it will still be delicious! Definitely more of a preference thing!

This is a delicious breakfast recipe that will make people smile! I love that this blueberry baked oatmeal is comfort food level delicious, but won’t leave you with a carb/sugar crash at 10 am!
I like to serve it with milk, extra blueberries, and turkey sausage on the side. And coffee. Always coffee. It’s the mom fuel we need, right?
This week my Kindergartener and husband are off for fall break and we are soaking in some lazy mornings and working on a few projects around the house.

I’m also trying to find little groupings by purpose like a spot for everything I need to hang a picture on my wall and another spot with everything I need to change a battery in a toy.
Our house is a great size, but it doesn’t have a lot of storage, so we are learning how to be smart with what we have! I am very basic so I really liked The Life Changing Magic of Tidying Up (you can get the audio book for free when you sign up for a free trial of Audible!) and I have also enjoyed listening to Allie Casazza’s podcast, The Purpose Show and follow @House.Peace on instagram for all the good organizing and home tips!
Then later on in the week we are heading back to the Fort Wayne, Indiana area for some more fun fall adventures! We are planning to go to the Fort Wayne Children’s Zoo, Science Central, take the kids to Promenade Park, an apple cider mill, exploring Shipshewana and Chain O Lakes State Park!
It’s gonna be a party! Feeling super blessed that even though we aren’t jetting off to the other side of the globe or anything wild, we get to spend the week together making our home a place of order and rest and adventuring together in Indiana!
We will for sure be chowing down on this delicious blueberry baked oatmeal at some point though!

This is sooo delicious! I put all ingredients except berries into my Ninja and pulsed a few times, and it was mixed. I removed the blades and stirred in the berries. Also used Egg Beaters and sugar-free syrup. Sweet treat without the sugar!
