Apple Cinnamon Pancakes

Enjoy the delicious flavor of fall with these apple pancakes! They are fluffy pancake perfection topped with apple slices simmered in maple syrup and cinnamon. The best breakfast you’ll make this fall!

What is your favorite fall flavor? Pumpkin Spice or Apple Cinnamon?

I took an informal poll on my Facebook and Instagram and was surprised to find that despite all they hype my people definitely prefer Apple Cinnamon as a fall flavor to pumpkin spice.

Since the people have spoken I put the pumpkin spice back in the cupboard and created these cinnamon apple pancakes instead. (Don’t worry I did create a totally awesome pumpkin pancake recipe too!)

Man are they delightful! I used my classic pancake recipe, but added some extra fall flavor by using applesauce, cinnamon and a pinch of nutmeg! I love these pancakes because they are light and fluffy while still being really, really filling. 

How to Make Apple Cinnamon Pancakes

  1. Start by beating an egg until light and fluffy. Don’t skip this step as it helps your pancakes get nice and fluffy too! 
  2. Then add in your wet ingredients to the egg and stir. The apple flavor in this pancake recipe comes from unsweetened applesauce in the batter. 
  3. Next combine all your wet and dry ingredients and whisk until a cake-like batter forms. 
  4. Heat griddle. You can test the temperature by sprinkling water droplets on your griddle–when they sizzle the temperature is perfect! 
  5. Drop pancake batter by 1/4-1/3 cup onto the griddle. You can gently spread out if need be.
  6. Watch for tiny bubbles to form on top of the pancake batter and pop. When they pop the pancakes are ready to turn. Don’t rush it and keep your heat on medium-high. Too high and the outside of the pancake will burn before the center is cooked through. 
  7. Flip. Cook on the other side for approximately 2-3 minutes longer then serve with the maple-cinnamon-apple topping.

  • An electric griddle makes whipping up a big family-size batch of pancakes a breeze!
  • This classic checked apron is perfect for keeping splatters at bay!
  • This is perhaps the most interesting little maple syrup pitcher I’ve ever seen! I’m not sure if I love it or am weirded out by it, but I’m leaning toward it being super cute and fun! I like to use a little pitcher so I can warm up my syrup before adding it to my pancakes.

How long will these pancakes last in the refrigerator?

These pancakes should last a week when stored in an airtight container. Reheat in the microwave for 20-30 seconds per pancakes

These healthy pancakes tasted great reheated the next day! Sometimes pancakes are “off” when reheated, but these were completely wonderful meaning I can make a big batch and have a quick and nutritious breakfast ready for me and my kiddos each weekday morning. *love*

Can I freeze these apple pancakes?

You sure can!

Make sure they are cooled to room temperature first. Then wrap tightly in plastic wrap. Wrap again in aluminum foil or place in a freezer safe container (I adore these ones because they stack easily!). 

I also make these Hearty Oatmeal Pancakes and Greek Yogurt Pancakes in our pancake rotations, but these apple cinnamon ones are perfect for crisp fall mornings. 

These apple pancakes are my kids favorite Saturday morning breakfast! I often make a big batch on the weekend and then we can just heat them up for busy weekday mornings!

My kids would eat pancakes every day for every meal if I’d let them.

Apple Cinnamon Pancakes

Enjoy the delicious flavor of fall with these cinnamon apple pancakes! They are fluffy, scrumptious and topped with apple slices simmered in maple syrup and cinnamon.

Ingredients

  • 1 egg
  • 2/3 cup milk
  • 2 TBSP butter, melted
  • 1/2 cup unsweetened applesauce
  • 1/2 cup white flour
  • 1/2 cup whole wheat flour
  • 1 TBSP sugar
  • 1 TBSP baking powder
  • 1/2 tsp cinnamon
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • Maple Cinnamon Apple topping
  • 1-2 apples, sliced
  • 1 TBSP maple syrup
  • 1/4 tsp cinnamon

Instructions

  1. Beat egg until fluffy. Beat in milk, applesauce, butter. Then add in flour, sugar, baking powder, cinnamon, nutmeg, and salt and stir until smooth.
  2. (For thinner pancakes stir in 1/4 cup of milk)
  3. Grease heated griddle with cooking spray. Pour batter by 1/3 cup scoop onto hot griddle. Cook pancakes until puffed and dry around edge and bubbles form on the top of the pancakes. Turn and cook other side until golden brown.
  4. Stack on plate and cover with towel to keep warm. Serve warm topped with maple cinnamon apple slices.

Maple Cinnamon Apple topping

Combine apple slices, maple syrup and cinnamon in a small frying pan and saute over medium heat until apple slices are soft.
