The BEST Gingerbread French Toast Bake

This amazingly delicious Gingerbread French Toast Bake Recipe is sure to leave your family cheering! These easy french toast casserole is perfect for holiday breakfasts or weekends!

The good news is NO slaving in the kitchen Christmas morning! Seriously! You can prep this in 15 minutes the night before and just pop it in the oven and it will be hot ready to go after the presents are opened! The smell of the gingerbread flavor in this french toast casserole is mouthwatering.

I don’t make gingerbread cookies (I stay plenty busy with my Chewy Walnut Treasures and Andes Mint Cookies) so I like incorporating the flavor into this easy breakfast on Christmas morning.

Do you have any big Christmas morning traditions? We’ve been finding our own ones like opening stockings and then reading the Christmas story together from Luke 2. Followed by opening ALL the presents (one at a time–we’re not animals) and Christmas breakfast, then playing with new gifts. Then we do a heavy snack for lunch (buffalo chicken dip, cheese and crackers) and have steak and cheesecake for dinner!

Our first Christmas together Nate and I decided to eat our favorite foods on Christmas day not any traditional foods like ham or roast beef. We really like our dinner traditions and I love having a meal we get to indulge in higher price ingredients and “fancier” food than normal! Our kids basically eat rolls, but it’s FINE. No fighting on Christmas!

The BEST Gingerbread French Toast Bake

Yield: 12 pieces

Delicious and satisfying Chrismtas morning Gingerbread French Toast Bake

Ingredients

  • 1 loaf French bread
  • 6 eggs
  • 2 1/2 cups milk
  • 1/4 cup sugar
  • 1/4 cup molasses
  • 1 teaspoon vanilla
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ginger
  • Topping:
  • 1/2 cup chopped walnuts
  • 1/2 cup brown sugar
  • 1/4 cup flour
  • 1 teaspoon cinnamon
  • 3 Tablespoons chilled butter

Instructions

  1. Cut up french bread into 2 inch cubes. Place in lightly greased 9x13 pan.
  2. Whisk eggs, milk, sugar, molasses, vanilla and spices together in a separate bowl.
  3. Pour milk/egg mixture over the bread. Cover overnight in the fridge.
  4. For topping, mix walnuts, brown sugar, flour, and cinnamon together. Cut in butter with a pastry blender or fingers until fine crumbs are formed. When ready to bake pour topping over casserole.
  5. Bake at 350 degrees covered for 20 minutes and uncovered for 25-30 minutes. The top should be golden and the bread fully cooked.

Notes

You do not need to refrigerate overnight if you are making it the same day. Just be sure the French bread is thoroughly soaked with the wet ingredients.

 

 

Is your tummy grumbling? I’m telling you this breakfast casserole is amazing! Soft and spicy gingerbread flavor in the center and chewy, sugary crumb streusel on top….seriously delicious!!
