Garlic Roasted Asparagus and Red Pepper

I love easy, fresh recipes all the time, but especially in the summer. The availability of local, seasonal produce makes me so excited! Asparagus our in season right now and they are one of those vegetables that took me a long time to come around to liking. I’m still not a big fan of them cooked certain ways (steamed!), but I’ve learned that in order to make any vegetable delicious you should roast it!

Garlic Roasted Asparagus and Red Pepper - An easy, healthy side dish, perfect for summer grilling! Roasted veggies are SO flavorful! YUM!!

Roasting is so quick and easy and is the perfect compliment to summer grilling (have you tried any of these mouthwatering burgers yet?). I love the beautiful color of the red pepper, but you can use any color of bell pepper–yellow, orange or green. You can definitely mince your own garlic for this recipe, but I used a jar of minced garlic I bought before my son was born to make my life a little easier–less clean up, but still delicious! I’m all about little swaps that make life with a newborn easier.

Garlic Roasted Asparagus and Red Pepper

Garlic Roasted Asparagus and Red Pepper

Yield: 6 servings
Prep Time: 10 minutes
Cook Time: 25 minutes
Total Time: 35 minutes

This easy garlic roasted asparagus and red pepper is the perfect healthy summer side dish.

Ingredients

  • 1 bundle, 1 pound of asparagus
  • 1 red pepper
  • 2 Tablespoons olive oil
  • 2 teaspoons minced garlic, about 3 minced
  • black pepper
  • salt

Instructions

  1. Chop the woody stems off the bottom of the asparagus, the bottom 1-1 1/2 inch of the stem. Deseed and slice the red pepper. Place on a cookie sheet covered in aluminum foil (it will make clean up SO much easier). Drizzle with olive oil. Stir gently or toss until thoroughly coated. Sprinkle garlic, black pepper, and salt over vegetables. Roast at 425 for 20-25 minutes, stirring once in the middle.

We enjoyed these roasted vegetables earlier this week with burgers when my in-laws were in town. I love how simple and quick it is to get some yummy veggies on the table for your family. Layla wasn’t into them at all, but we just keep presenting and coaching her to take a bite and trust that someday she will get on board with the vegetables. Since I only started liking asparagus in the last few years, I’m not too worried.

Hope you enjoy the Memorial Day holiday weekend! We will spend part of it with Nate’s family and then the rest just relaxing. I’m sure a trip to our little lakeside beach will be in order as well. Bring on the summer!
