Grilled Turkey and Mushroom Sandwich
Sometimes it really bums me out that dairy doesn’t agree with me. I mean, I don’t die if I eat it or break out in hives…and some things are definitely worth the pain, but overall it’s kind of a drag. I especially miss diary when Nate requests the classic lunch: grilled cheese and tomato soup. It’s really sad to eat dry toast or a plain ham sandwich with tomato soup. It just doesn’t warm your heart in the same way.
So it an attempt to ease the grilled cheese size hole in my heart I created this sandwich. And it is good, folks. Real good. It dips great in tomato soup and is very filling.
Grilled Turkey and Mushroom Sandwich
Ingredients:
Two slices whole wheat bread
Butter
2 slices all natural turkey breast deli meat
2-4 mushrooms, sliced
1 Tablespoon garlic hummus
Optional: Sprinkle of sharp cheddar
Directions:
Butter both slices of bread. Heat griddle. (You could also use a forman grill or panini maker.) Place one slice of bread butter side down on the griddle. Spread hummus on bread, then make a layer of mushrooms, top with turkey and cheese, if desired. Cook 2-4 minutes until golden; flip and grill other side, pressing down with the spatula. Remove from griddle and serve.
This easy is super-delicious! If you are vegetarian it is easy to sub out the meat and still have a very filling sandwich, thanks to the mushrooms. And if you do enjoy eating dairy, a sprinkle of cheddar on top would be great too! Yum! Simple and perfect for a chilly afternoon.
