So many classic summer recipes are loaded with fat, sugars, and other not-so-good for you things, but there are lots of healthy recipes alternatives or simple swaps you can make to lighten up your plate this Memorial Day!
Blueberry Honey Almond Milk Ice Cream
This summer I am officially obsessed with making my own dairy free ice cream! This blueberry ice cream recipe is simple and a great way to get in a sweet treat this summer!
2 cups almond milk
3 Tablespoons honey (to taste—you may need more or less depending on how sensitive your taste buds are)
dash of salt
1/2 cup blueberries slightly mashed
Combine all ingredients whisking thoroughly until blended. Honey may need to be heated so it blends better. Gentle pour into ice cream freezer and process according to manufacturers directions. Serve immediately.
