Oatmeal Pancake Mix

This is my classic oatmeal pancake recipe! The oatmeal pancake mix makes a perfect homemade Christmas gifts for neighbors and friends!  They are easy and inexpensive to put together and everyone loves to have something fast delicious to whip up on a cold morning. These pancakes are nice and hearty. They stand alone or are a nice backdrop to add-ins like blueberries, bananas, pecans, chocolate chips or whatever you like to throw into your pancakes.

Oatmeal Pancake Mix

1 1/2 cup rolled oats

1 1/3 cup flour (whole wheat or white)

1 Tablespoon sugar

2 1/2 teaspoon baking powder

1 teaspoon salt

1 teaspoon cinnamon

(I also add a scoop of protein powder to my mix sometimes; just take out the same amount of flour so your pancakes don’t end up dry.)

Blend thoroughly and place in storage container. Makes 3 cups of mix.

I like to package my mix in a mason jar—they are just so precious with a cute ribbon tied around them, plus less hassle for you.
