No Bake Peanut Butter Protein Cookies

Do you ever just have a craving and NEED something sweet? (Uh, ever-y-day!) Is cooking in general a struggle for you or is today just one of those days you are feeling a bit lazy in the kitchen?

But of course you still need something sweet, delicious and yes, just a bit healthy!

No bake peanut butter protein cookies

Look no further my easy-loving, sweet-tooth friend! These No Bake Peanut Butter Protein Cookies have got your back! You can literally make them in the microwave. No kitchen skills required! Because they are so simple these no bake protein cookies are perfect for mixing up with your masterchef junior if they are always dying to “help” in the  kitchen.

Peanut Butter Protein Cookies

Yield: 18 cookies
Prep Time: 10 minutes
Total Time: 10 minutes

Easy and delicious these No Bake Peanut Butter Protein Cookies are perfect for a healthy snack or sweet treat!

Ingredients

  • 1 cup all natural peanut butter
  • 1/2 cup melted butter
  • 1/2 cup maple syrup
  • 1 teaspoon vanilla
  • 1/2 teaspoon salt
  • 2 scoops vanilla protein powder, about 1/2 cup
  • 1 3/4 cup quick cooking oats

Instructions

  1. Melt peanut butter, maple syrup, and butter in the microwave heating 1 minute at a time and stirring in between until it is completely melted. (Alternatively you can melt in a saucepan over low heat.)
  2. Stir in oats, protein powder, salt, and vanilla until thoroughly combined.
  3. Drop cookies onto wax paper. Allow to cool and harden.
  4. Store in the refrigerator or freezer.

These peanut butter cookies melt in your mouth and I love the subtle flavor of the maple syrup! (Honey will also work if you don’t have pure maple syrup.) For this recipe I used Vanilla Shakeology for the protein powder. I also really like Quest Protein Powder Vanilla Milkshake, but it is sweeter so you may want to cut back on the maple syrup (down to 1/3 cup) if you use this brand. no bake protein cookies

Also, Happy Halloween! We are taking our babies trick or treating in our town square tonight! Should be fun and then we will have lots of candy to “monitor”. Haha! I think things might be different this year since Layla is a little older so she will realize that she didn’t come home with 5 pieces of candy! 😉

One of our Halloween traditions is watching The Nightmare Before Christmas, but I’m kind of hoping we can watch the hilarious OLD Ghost and Mr. Chicken movie or some Harry Potter instead. I’m just kind of “watched out” of The Nightmare Before Christmas.  We also have our annual pumpkin carving party which we did last week! Still a lot of fun, but crazier these days with tiny princesses and superheroes running around like hooligans!
