Potato soup in the crockpot is one of my mom’s classic recipes. She often makes it when all of the family comes home for dinner and my mouth waters just thinking about it! She’s a bit more extra than me so her potato soup dinner includes homemade bread slathered with butter and fresh strawberry jam. It is something to BEHOLD.
But her daughter is not really a homemade bread on a weeknight type of girl so I like to just pair this with an easy side salad and a loaf of store-bought Italian or French bread. But if you are a homemade bread type of person like my mama, please you do you and make that homemade bread! More power to ya!
This easy potato soup recipe is perfect for busy nights because you can put it all together in the crockpot and just let it simmer away all day. The smell will eventually envelop your whole house and you’ll want to eat the furniture. (jk that’s not going to happen, it’s just going to smell good.)

Slow Cooker Potato Soup
This Slow Cooker Potato Soup recipe is perfect for cold days! So easy to prepare thanks to using the crockpot! Enjoy with a sprinkle of cheddar cheese, salad, and warm bread!
Ingredients
- 3-4 large potatoes, diced
- 2 cups chicken broth
- 1 stalk celery, finely chopped
- 1 cup diced cooked ham
- 1/2 onion finely chopped or 1 Tablespoon minced onion
- 1 Tablespoon chives
- 1 teaspoon garlic
- salt and pepper to taste
- 1 can evaporated milk
- 1/4 cup potato flakes
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
Instructions
- Place diced potatoes, celery, ham, onion, chives, garlic, salt and pepper and chicken broth in slow cooker. Cook 4 hours on low until potatoes are tender.
- Switch to warm function. Add milk, potato flakes, cheese, and sour cream. Stir. Let cook another hour until warm and bubbly.

Yummy! I’m going to try this. My hubby’s a sucker for thick soups, not sure why? He’s not a fan of the broth-type soups. Maybe it’s because it isn’t as filling. Anyways, thanks for sharing.

It just makes it thicker! You can skip it or even add extra leftover mashed potatoes if you have them.
