Slow Cooker Pumpkin Oatmeal
This delicious slow cooker pumpkin oatmeal makes mornings a breeze! A simple and healthy way to start your day with fiber, wholesome oats, pumpkin, and protein powder.
So the other morning I was literally running around like a crazy person in my kitchen, here’s how it went down:
Put toast in toaster. Look for coffee cup. Take knife from toddler’s hand (she’s trying to help butter the toast). Get bowls out for Greek yogurt. Toast pops pup. Butter toast. Put toddler in high chair. Scoop Greek yogurt into bowls. Toddler demands a drink. Pick up fussy baby. Get out baby cereal. Pour toddler a drink and take it to her. Cut up a few strawberries. Reheat coffee. Mix up baby’s cereal. Finally take my yogurt and coffee to the table. Bring baby and cereal to the table. Sit down and eat.
I was ready to go back to bed! There has got to be an easier way people–short of getting a live-in cook or nanny or cloning myself.
My new plan looks something like this. 9:00 pm previous night: prep pumpkin oatmeal in the crockpot. Turn on warm. Go to sleep (eventually) and wake up to a ready-made breakfast! Place in bowls. Eat. Drink coffee while hot. Be happy.

Slow Cooker Pumpkin Oatmeal
This delicious slow cooker pumpkin oatmeal makes mornings a breeze! Simple and healthy way to start your day with fiber, wholesome oats, pumpkin, and protein powder.
Ingredients
- 1 cup oatmeal
- 1 cup water
- 1 cup milk
- 1/2 cup pumpkin
- 1/4 teaspoon salt
- 1/2 teaspoon cinnamon
- 1/2 teaspoon pumpkin pie spice
- 1 scoop protein powder, I use Shakeology- optional
- 1 Tablespoon maple syrup, or preferred sweetener to taste
- 1/2 cup dried cranberries
Instructions
- Combine all ingredients in the slow cooker and stir until well combined. Turn on warm and cook for 8-9 hours.
- (I think you could also do 6 hour on low, but I haven't tested it and I sleep longer than that! :))

You can also make this pumpkin oatmeal on the stove top. Just combine all ingredients and simmer on the stove until thickened. Not too difficult either, but I do love walking downstairs in the morning to the delicious smells of an already cooked meal!

We’ve been really love these brilliant September days. They start off cool and crisp, warm up to perfect play outside weather, and then fade out into that glorious coolness. Plus it gets dark at the perfect time–toddler bedtime! We are all about enjoying every second of the fall! Our family probably has too many traditions and things we love to do–apple cider making, trips to Gull Meadow Farm, pumpkin doughnuts, raking leaves, going to Shipshewanna, hayrides, bonfires, not to mention our pumpkin carving party! Love it all!
