Welcome to Day 4 of my 12 Days of Holiday Recipes! For 12 Days I’m sharing some of my favorite, easy, and sometimes healthy holiday recipes perfect for all the Thanksgiving and Christmas gatherings coming up in November and December!! The holidays are some of my favorite times to get busy in the kitchen, so many great recipes to enjoy and share together!

Today I’m sharing these delicious honey roasted carrots because they are such an easy and healthy and tasty holiday side dish! Unlike many other Thanksgiving or Christmas side dishes and vegetables they don’t have to cover up with cream cheese or cream of mushroom soup or a sleeve of crackers to be delicious–they just ARE!!

Honey Roasted Carrots

Yield: 6
Prep Time: 10 minutes
Cook Time: 20 minutes
Total Time: 30 minutes

Honey Roasted Carrots are simple and delicious healthy side dish perfect for holiday dinners or everyday weeknights. Roasting brings out the flavor of this delicious cooked carrot recipe!

Ingredients

  • 1 bag baby carrots
  • 2 tbsp olive oil
  • 2 tbsp honey
  • 2 tsp fresh minced garlic or 1 tsp garlic powder

Instructions

  1. Preheat oven to 400.
  2. Place carrots on greased cookie sheet. In a small bowl combine olive oil, honey and garlic.
  3. Pour mixture over carrots and toss until thoroughly coated. Grind a sprinkle of salt and pepper over the top of the carrots.
  4. Roast for 20 minutes, stirring once halfway through the process.

Why roast vegetables?

Roasting vegetables brings out the sweetness of vegetables by caramelizing them in dry heat. Roasting is a great way to cook and introduce a new healthy vegetable since it naturally adds to the sweetness and mellows out the flavor of veggies. Roasting vegetables is perfect for picky eaters!

What should I serve honey roasted carrots with?

These sweet carrots would pair well with your thanksgiving turkey or Christmas ham! They are also a great side with a healthy weeknight dinner like Mini Italian Meatloaves or Ground Beef Stroganoff!

What can I do with leftover roasted carrots?

My first thought would be to slice them and add them to a delicious chicken noodle soup! If you make them for Thanksgiving you could add use them to make turkey noodle soup and double down on using up those leftovers! I don’t have a chicken noodle soup recipe: I just kind of dump and stir chicken broth, chicken, carrots, celery, onion and spices together and let simmer on the stovetop or in a crockpot! In the last half hour add your favorite type of noodle and cook until tender! These honey roasted carrots will add a nice depth of flavor to your soup as well!

Do you peel carrots before roasting?

If you’re using a bunch of carrots, yes, I would peel them! You don’t HAVE to, but I feel like they are cleaner and the outside is not as sweet, but you do you boo! It definitely doesn’t hurt anything to leave the skins on!

But if you’re using baby carrots then you won’t need to do that! Baby carrots are incredibly convenient (which is why I love them and use them in this recipe!) but if you prefer to peel and slice regular carrots you can certainly use them in this recipe!
