Italian Herb Roasted Vegetables are an easy and healthy side dish for busy weeknight dinners! The roasting and fresh herbs totally take them to another level!

1 yellow bell pepper
1red bell pepper
1 small red onion
1 cupcauliflower florets
1.5cup new potatoes (or potato chunks)
1/4 cupfresh parsleychopped
1/4 cupfresh basilchopped
1/4 cupolive oil
salt and pepper to tasteif desired
Preheat oven to 400. Cut peppers and onion into bite-size pieces. You should have about 4 cups of vegetables total. Feel free to tweak the amounts to your preference! Place veggies on baking sheet. Sprinkle fresh herbs over the vegetables. Add a sprinkle of salt and pepper to taste if desired. Pour the olive oil over the vegetables and toss gently to thoroughly coat. Bake at 400 for 20-25 minutes.
