15 ouncesfire roasted diced tomatoes
1small cantomato paste
2cupsvegetable or chicken stock
2TBSPbutter substitute such as Earth Balance butter
2tsp minced garlic cloves or 1 tsp garlic powder
1/2 tspStevia or sugar (or to taste)
115 oz cancoconut milk
Blend tomatoes in a small food processor. Place tomatoes, tomato paste, chicken broth, butter, stevia or sugar, garlic, basil, and oregano in stockpot on the stove over low heat. Simmer for 15 minutes.
Gently stir in coconut milk and heat for another 5-10 minutes. Serve hot.
