Blueberry Chia Parfait
Snacktime is my favorite meal of the day. I love snacks and have often been known to sneak a snack, even a half hour before dinner. Why do I love snacks so much? Well, you see, it is a very fine line for me from “a little hungry” to full on “eat everything in sight”. I think it probably has something to do with a family history of diabetes and my blood sugar, but all I know is that I don’t like to be hungry, hence my love of snacktime.
A couple weeks ago Special K sent me an awesome collection of goodies to review including these awesome snack bars! I like bars because they are so easy and perfect for throwing in the diaper bag or car when I know I’ll be out for awhile. Then when I feel the “crazy-hunger” coming on I don’t fly wheels screeching to the nearest Dairy Queen.
While munching on the blueberry bliss bar I had an epiphany for a parfait that would be an amazing healthy snack or end of the day dessert….a blueberry chia parfait.
An awesome thing about this parfait is that it comes together super-quick and it just feels special. Like a mini-vacation right in the middle of your day. Plus it uses chia seeds, which are an amazing source of omega-3s, calcium, and antioxidants!
Blueberry Chia Parfait made with Special K Snack Bar
Ingredients:
Special K Blueberry Bliss Snack Bar
1/2 cup of blueberries (fresh or frozen)
3/4 cup almond milk
3 tablspoons chia seeds
1 teaspoon vanilla
1 teaspoon honey
dash of salt
Directions:
Mix almond milk, chia seeds, honey, vanilla and salt with a whisk until well blended. Place in refrigerator for 2-3 hours to gel. (Overnight is great if you have time!) Layer chia seed pudding, blueberries and crumbled half of the bar in jar or other container. Repeat layers once more. Serve chilled.

I haven’t tried these bars yet, but I love the idea of crumbling them into a parfait! This would be the perfect way to start the day.
