Family Menu & Workout Plan: Feb 9-15
I feel like I write this every week, but last week did not go as planned. We were struck by multiple sicknesses…..Layla stomach bug on Tuesday, me cold on Tuesday (thank goodness Nate stayed home and took care of us!) and then I got the stomach bug on Thursday night and Nate followed on early Saturday morning. Ugh! So two days of the week went well! And the rest were just getting by. Mama said there’d be days like these. Thankfully we are all better now!
Family Menu:
Tuesday: Salsa chicken with tacos
Directions: Place 1 pound boneless chicken breast with one jar of your favorite salsa. Cook on low for 6 hours. Shred chicken (it’s so easy to do in your kitchenaid!) and serve with whole wheat tortillas and all the fixins!
Wednesday: Potato Soup
Thursday: Homemade Pizza
Friday Chili and Beer Bread
Saturday: at camp
Sunday: Out –Qdoba free burrito if you kiss…something.
Monday: Tacos

Workout Schedule
Monday: Off
Tuesday: 20 min lower body barre workout plus stretching
Wednesday: 25 minute walk
Thursday: Zumba Refit at MOPs
Friday: Off
Saturday: 20 min upper body barre workout plus stretching
Sunday: 25 minute walk
I’m trying to be realistic with my workout plan, but still keep moving. I’m still wearing my Garmin Vivosmart and aiming for more than 7000 steps a day as well. If you are curious I get my winter walking in at our camp’s ministry center which has a small gym with treadmills and an elevated track. A great perk of living at camp!
A couple other goals I have for this week are…
- To finish making the curtains for Layla’s big girl room and the nursery
- Nate and I are also hoping to have Layla’s room completely cleaned and cleared out of “office mode”. Then next we can get ready for her room reveal for her birthday!
Tomorrow we are 2 months from my due date! Ah! Super-exciting! After we get Layla’s room all finished we will move on to prepping the nursery for “boy mode”. There isn’t a lot we have to do, just a few small touches. My goal is to have the nursery ready in the next month and then the last month I can nest and rest. That’s the plan at least! And we all know how plans go… 🙂
What do you have planned this week? What’s your go-to healthy dinner staple?

Great workout plan and I can’t wait to try your chicken recipe! I find getting my steps in a challenge too. Have a great week and thanks for linking up!
It’s literally the simplest thing ever!
Hey Kate –
I made Salsa chicken this week too! BUT I added sliced bell peppers, carrots, and a packet of taco seasoning it was delicious! I served mine with rice and I loved it!
Yum! That sounds awesome! Love that you made it your own!
