Healthy No Bake Chocolate Energy Bites

Healthy no bake energy bites are an easy and delicious snack that pack a ton of health benefits too!

I’ve been a fan of this time of healthy “energy bites” or “energy balls” for a couple of years, but have rarely made them the same way twice or written down a recipe…I just kind of dump and stir and taste until I get something I like.Chocolate Coconut Bites - a healthy snack that is delicious and perfect for curing your chocolate craving, it tastes like an almond joy bar! With the holidays over I find myself steal craving something sweet, but I don’t want to have cookies or any of the holiday stuff we JUST got rid of hanging around tempting us…so these healthy no bake chocolate energy bites are exactly what we need as we all try to eat healthier.

Why are energy balls good for you?

By using  a food processor to chop and blend dates, nuts, coconut, and chocolate you can create a healthy snack that has energy, protein, healthy fats, natural sweetener, and great flavor! Dates provide sweetness and carbohydrate energy, while coconut and almonds adds a healthy fat to provide some sticking in power to your energy!

These little bites kind of remind me of almond joy bars! I also love that they are gluten and dairy free so perfect if you are trying to avoid either of those things! You can also use honey or another natural sweetener like Stevia  in place of the maple syrup, just adjust the amount to suit your tastes.

Chocolate Coconut Bites

Yield: 14 balls
Prep Time: 10 minutes
Total Time: 10 minutes

These chocolate coconut bites are the perfect high energy snack made with all natural ingredients. They store great in the fridge or freezer and are the perfect healthy dessert or snack choice!

Ingredients

  • 1 1/2 cups Pitted Dates
  • 3/4 cup almonds
  • 3/4 cup unsweetened shredded coconut
  • 3 Tablespoons cocoa powder
  • 2 Tablespoons maple syrup
  • Sprinkle of salt

Instructions

  1. Chop 1/2 of the dates in a food processor (depending on the size of your food processor you may need to do in smaller batches) and then the other half.
  2. Repeat the process with the almonds and then blend both almonds and dates together (in batches again if necessary).
  3. Mix in cocoa powder, maple syrup, and salt until well mixed.
  4. Press into small balls and freeze for 1-2 hours. Store in the refrigerator or freezer.

How long do energy bites last in the fridge?

You should store these no bake energy bites in the fridge or freezer. They should last for a week in the fridge and up to 3 months in the freezer! I’ve never been able to keep them around that long but a long slow clap to you if you can!

What’s not to love about these delicious little bites of wonder? Kids love them! Grown ups love them!!  These are pretty similar to larabars, just less expensive and I’m glad we can enjoy these healthy “cookies” to satisfy our sweet cravings!

Hope you all are having a great Monday! We’ve got more snow so I imagine there will be lots of snuggling in…but maybe I will be brave and take my daughter out to play in the snow. Her snowsuit is too darn cute that I can’t help but bundle her up in it! When we come back inside we will need some warm cocoa or this delicious chai tea latte to heat us up and pair with these yummy little “cookies”.
