Lazy Day Blackberry Cobbler

This lazy day blackberry cobbler–it’s so easy, delicious, incredibly simple to make, and everyone raves over it! It’s my go-to dessert for busy days! You can make it with fresh or frozen berries too!

This is a “sister recipe” to one of my most popular recipes easy blueberry cobbler and my the equally delicious lazy day peach cobbler recipe. All are made with the same basic recipe with simple ingredients that was passed down from my mama!

This lazy day blackberry cobbler is so beautiful with it’s warm golden crust and dots of fresh blackberries, and if you top it with a scoop of vanilla ice cream– I swear heaven starts singing! 

Ingredients in Blackberry Cobbler

This simple recipe uses many classic ingredients that are probably already in your pantry, fridge and freezer! Here’s a quick run-down of the ingredients.

  • Fresh Blackberries — I love making this with fresh berries, but frozen work well too! 
  • Lemon juice — Just the right amount to balance out the sweetness! You can use freshly squeezed or already bottled lemon juice
  • Sugar — Granulated sugar adds the sweet flavor to the berries. 
  • Unsalted Butter — This is going to keep our cobbler from sticking, but also add amazing flavor to our delicious dessert. 
  • Homemade Batter — Some cobbler recipes use premade mixes–but this super simple batter is made with sugar, flour, salt, milk and baking powder. It’s a mixture between a sponge cake and a butter cake. Certainly no dry cobbler here!

How to make blackberry cobbler from scratch

  1. Heat oven to 350.
  2. Melt stick of butter in a small bowl in microwave. (Or you can put it right in the baking dish and melt it in the oven while it preheats.)
  3. Pour melted butter into baking dish. 
  4. Whisk dry ingredients (white sugar, all purpose flour, salt, baking powder) together in large bowl. 
  5. Add milk and stir until combined. 
  6. Drop batter into baking dish on top of butter. 
  7. Combine juicy blueberries and lemon juice and then place blackberries on top of the butter and batter. 
  8. Bake and enjoy warm with a scoop of vanilla ice cream! 

Can you use frozen blackberries in this cobbler?

Yes! You can use frozen blackberries in this easy cobbler recipe! Defrost them preferably overnight in the refrigerator or you can do it at room temperature or defrost them in the microwave. Be sure to strain off any excess juice.

Just be sure to place them in a bowl before defrosting! Otherwise you will have juice EVERYWHERE. I promise, it is not easy to clean up from your fridge or countertop!

Can I make this cobbler recipe with a different fruit?

Of course is this obvious answer! Yes, you absolutely can create different fruit cobbler with this recipe, especially a different berry like raspberry or even a sweet cherry would be absolutely delicious!

Stone fruit like peaches and apricots also work well with it! You could also do half raspberries and half blackberries and throw in some blueberries to create a triple berry cobbler!

Does this blackberry cobbler need refrigerated?

Cover your blackberry cobbler with plastic wrap or tin foil and it can last on the counter for 12 hours. Anything longer than that and I would refrigerate it in an airtight container.

I placed our leftover cobbler in the refrigerator overnight and had a piece cold and served with a vanilla Greek yogurt for breakfast and I’m not gonna lie, it was amazing!

There really isn’t a wrong way to enjoy this homemade blackberry cobbler recipe!

Easy Blackberry Cobbler Recipe

Blackberry Cobbler

This homemade Blackberry Cobbler is quick and easy making it a practically perfect summertime dessert!

Ingredients

  • 1/2 cup unsalted butter
  • 1 cup flour
  • 1 cup sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 2/3 cup milk
  • 3 cups blackberries
  • 1 tbsp lemon juice

Instructions

  1. Heat oven to 350. Melt butter in oven in a 2 quart, 8x11 baking dish. (Yes! Just do it!) Or melt butter over stovetop and pour into baking dish.
  2. Mix flour, 1 cup sugar, salt, and baking powder. Add milk gradually until a smooth batter forms. Spoon batter into baking dish on top of butter until the butter is covered with batter.
  3. In a separate bowl sprinkle lemon juice on blueberries. Top the batter evenly with blueberries mixture.
  4. Bake at 350 for 40 minutes or until cobbler is light brown across the entire dish. Serve warm with a scoop of ice cream.

  1. Your recipe is for blackberry cobbler but you refer to mixing lemon juice and blueberries in the direction. I assume this should be blackberries?
